Ingredients
4 large Bell peppers or capsicum—can be different colors
5 peeled Shallots
1 Serrano pepper
¼ cup of Vinegar
1 tablespoon of Sesame oil
Salt to taste
Directions:
Char the peppers over an open flame such that they are completely charred on all sides—at this point, place them in a large bowl with a lid and set aside to steam.
When the peppers have cooled and steamed, peel off the charred skin and set aside.
In a nonstick pan, heat the oil and add the serrano and shallots—sauté on a high flame until the ingredients have been caramelized.
Add the vinegar and allow the mixture to come to a boil.
Now, combine all the ingredients in a food processor and pulse until you achieve a salsa texture.
Add salt to taste and serve with your favorite pita or tortilla chips.
