Rice bowl with vegetables and protein

Ingredients:

  1. 4 cups of cooked long or short grain rice

  2. 1 bunch of fresh Cilantro leaves

  3. 2 Serrano chilies chopped fine

  4. 2 teaspoons of ground Coriander powder

  5. 1 teaspoon of Garam masala

  6. 1 tablespoon of low sodium Soy sauce

  7. 1 tbsp of aged Balsamic Vinegar

  8. 1 large bunch of chopped organic Kale

  9. Chinese eggplant—4 Large eggplants sliced into thin pieces

  10. 1 box of organic Tofu

  11. 3 Mixed bell peppers—thinly sliced

  12. 5 tsp of sesame oil

Directions:

Cilantro Rice

  • Finely mince the Cilantro and Serrano chilis in a food processor and set aside.

  • In a large Wok, heat 1 tsp of the sesame oil and ⅓ of Cilantro/Serrano mixture and sauté for 5 minutes over a medium heat.

  • Add the cooked rice and 1 teaspoon of the ground coriander and stir fry for an additional 5 minutes. Add salt to taste and set aside.

Spiced Tofu—

  • Heat 1 tsp of the sesame oil in a wok and add ⅓ of Cilantro/Serrano mixture and 1 teaspoon of coriander powder. Cook this for 5 minutes on a moderate heat.

  • Add the Tofu and Soy sauce and stir fry for an additional 10 minutes and set aside.


Eggplant Stir fry

  • Heat 1 tsp of sesame oil in the wok and when the oil is smoking add the eggplant and ½ teaspoon of garam masala and salt. Stir fry eggplant until tender and set aside.

Kale Stir fry

  • Heat 1 tsp of sesame oil and add the kale and salt and remaining garam masala. Stir fry the kale for 5 minutes and set aside.

Mixed pepper stir fry

  • Heat 1 teaspoon of sesame oil in a wok and add the remaining Cilantro/Serrano mixture and after stir frying for 5 minutes add the bell peppers and 1 tablespoon of aged balsamic vinegar. Again, stir fry until cooked and set aside.

    The Rice can be served in a bowl or plate with all the sides. If desired, you can sprinkle some organic sunflower seeds for an extra crunch.
