Chicken with Spinach Pesto


Ingredients:

2 pounds of cubed boneless, skinless chicken breast

1 Large sliced white onion

1 tsp organic garam masala

½ head of peeled and minced garlic

1 tsp organic ground turmeric

1 pound baby spinach - washed and drained

¼ cup shelled peanuts

2-4 dried whole cayenne peppers

1 bunch fresh cilantro - washed and drained

3 tsp sesame oil



Directions:

  • In a nonstick pan, heat 1 tsp oil and add dried cayenne peppers, peanuts. Brown gently over a moderate heat.

  • Add the cilantro and spinach and cover to gently steam. Turn off heat after 5 minutes, then

purée the mixture and set aside.

  • Heat 2 tsp of oil in deep nonstick pan and add sliced onions, garlic, and sauté for 5 minutes on a moderate heat.

  • Add the cubed chicken and sauté with turmeric and garam masala.

  • Allow chicken to cook for 10 minutes on moderate heat with the pan covered.

  • When the chicken is cooked add the puréed spinach mixture.

  • Allow the chicken to simmer in this mixture for 5-10 minutes until the flavors are fully incorporated.

  • Serve with your favorite side of steamed white/brown rice, pasta, quinoa, polenta or naan.
