Succulent Turkey meatballs in Curry sauce

Ingredients:

2 pounds ground lean turkey

2 large onions sliced small

2 large tomatoes diced

3 inch ginger peeled and minced

1 head of garlic peeled and minced

2 curry leaves sprigs -washed

1 tsp chilli powder

2 tsp turmeric ground powder

1 teaspoon ground black pepper

1 stick of cinnamon

1 tsp garam masala

1 head of cauliflower cleaned and divided into bite-sized florets

2 green capsicums diced small

2 tbsp of sesame oil

2 cups crushed tomatoes

2 tbsp pan roasted peanuts

1tbsp fresh cilantro to garnish


Directions:

  • In a large bowl add the ground turkey, 1/2 tbsp of sesame oil,1 tsp turmeric, 1 tsp chilli powder, 1 large onion sliced small, half of the minced ginger and mix thoroughly and set aside to marinate in the refrigerator

  • Heat oil in a deep nonstick pan and heat 1 tbsp of sesame oil under moderate heat and add the cinnamon stick, remaining onions, garlic, curry leaves, remaining ginger, garam masala, black pepper, salt to taste and 2 large tomatoes sliced small and sauté over moderate heat until the mixture is softened.

  • Take the 2 cups of crushed tomatoes and all the peanuts and grind to a smooth paste in the grinder and add to the mixture in the pan.

  • In a separate pan, sauté the cauliflower florets and capsicum with remaining sesame oil, add remaining turmeric. Later add the veggies to the mixture in the pan.

  • Add water to thin out the sauce and allow to simmer over medium low heat for 10 minutes

  • Take the marinated turkey and form into small balls with your hands and gently layer into sauce.

  • The turkey meatballs will poach and cook covered for additional 20 minutes with sauce gently simmering on low heat and garnish with cilantro

  • Serve with your favorite side of brown/white rice, with polenta, naan or with quinoa



This recipe is very healthy as the meatballs are poached, very delicate and rich in protein and essential nutrients. It can be served with a side, or eaten as a soup.
