Ingredients:
1. 2 pounds of ground turkey
2. 1 large, diced red onion
3. 2 large, diced tomatoes
4. 4 cloves of minced garlic
5. 2 minced green chilies
6. 2 diced, yellow capsicum
7. 2 cups of diced baby carrots
8. 1 tsp of ground dried oregano
9. 1 tsp of ground dried parsley
10. 2 tbsp of fresh lemon juice
11. 3 tbsp of extra virgin olive oil
12. 4 cups of raw, organic basmati rice
13. 1 tsp of garam masala
14. 1 tsp of ground turmeric
15. 4 cups of chicken broth and additional water to cook rice
Directions:
1. Heat a large pan over a moderate heat and add 1 tsp olive oil.
2. Add the garam masala, turmeric, and ground turkey, and sauté the minced turkey and set aside.
3. Heat another large pan and add the remaining oil and sauté the onions, carrots, green chilies, dried oregano, dried parsley, and raw rice, and continue to coat rice with oil and spices.
4. Add salt to taste and the tomatoes and continue to sauté ingredients.
5. Add the minced turkey and lemon juice to the mixture and heat the 4 cups of chicken broth and 2 cups of water until they boil. At this point, add to the rice mixture. The heat should be at a moderate flame and mix all ingredients thoroughly.
6. Cover with foil and a lid to trap steam and allow to cook for 10 minutes covered.
7. Uncover and gently mix all the ingredients and cover with the foil and lid and allow to steam on a low flame for 5 min. After this, turn off the heat and allow to steam for 10 more minutes
8. Serve hot with Raita on the side. (you can find the recipe for Raita on my site)
This dish is high in protein and flavor. You can cherish the aroma and taste of paella with a spicy twist. I like turkey, but you can substitute it with other ground meats as well and enjoy this dish year-round. As always, I wish that you eat in a health-conscious way and live long and strong!
