 Gluten-Free Banana Blondies

Ingredients:

  1. 3 cups mashed bananas—3 bananas 

  2. 1 whole egg

  3. 4 egg whites

  4. 1 cup of almond flour

  5. ¾ cup coconut flour

  6. 1 teaspoon baking powder

  7. 1 teaspoon baking soda

  8. 1 teaspoon cinnamon

  9. 4 tbsp. coconut sugar

  10. 1 teaspoon of vanilla extract


Directions:

  • Whisk the egg whites until frothy, and whisk in the whole egg.

  • Add the mashed bananas, vanilla extract, sugar, baking powder, and baking soda, and mix well.

  • Gradually fold in the flour and incorporate thoroughly.

  • Preheat the oven to 365°F and bake the blondies in a square tray for 20–25 minutes.


This recipe is gluten-free and has a rich banana flavor. It is important to note that the only fat comes from one whole egg. The blondies are very soft and spongy, despite this. The blondies can be frosted with cream cheese if desired, but my family enjoys them as is with a cup of chai. As always, pay attention to your nutrition and health, and live long and strong!
