Vegan green papaya salad

Ingredients

  1. 3 cups of shredded green papaya soaked in cold water

  2. 1 Thai green chili

  3. 2 cloves of garlic

  4. 2 tablespoons of roasted peanuts

  5. 1 tablespoon Kecap Manis (an aromatic, sweet, and thick Indonesian soy sauce)

  6. 1 tablespoon of soy sauce

  7. 1 tablespoon of tamarind sauce

  8. 1 teaspoon of coconut sugar

  9. 1 teaspoon of agave

  10. 1 tablespoon of lime juice

  11. ½ teaspoon lime zest

  12. 1 cup sliced cherry tomatoes

Directions:

  • Drain the papaya of all the water and set it aside in a large bowl.

  • In a mortar and pestle, grind the garlic, chili, and 1 tablespoon of roasted peanuts.

  • At this point, add the soy sauce, kecap manis, coconut sugar, lime juice, and lime zest.

  • Add this to the papaya, add the cherry tomatoes, and toss the entire mixture to evenly coat the papaya strips and tomatoes.

  • Sprinkle the remaining peanuts on top of the salad.

  • Serve as a side dish or with some steamed rice.
