Vegan green papaya salad
Ingredients
3 cups of shredded green papaya soaked in cold water
1 Thai green chili
2 cloves of garlic
2 tablespoons of roasted peanuts
1 tablespoon Kecap Manis (an aromatic, sweet, and thick Indonesian soy sauce)
1 tablespoon of soy sauce
1 tablespoon of tamarind sauce
1 teaspoon of coconut sugar
1 teaspoon of agave
1 tablespoon of lime juice
½ teaspoon lime zest
1 cup sliced cherry tomatoes
Directions:
Drain the papaya of all the water and set it aside in a large bowl.
In a mortar and pestle, grind the garlic, chili, and 1 tablespoon of roasted peanuts.
At this point, add the soy sauce, kecap manis, coconut sugar, lime juice, and lime zest.
Add this to the papaya, add the cherry tomatoes, and toss the entire mixture to evenly coat the papaya strips and tomatoes.
Sprinkle the remaining peanuts on top of the salad.
Serve as a side dish or with some steamed rice.
