Karaikudi Style Chicken Masala
Ingredients:
1 Whole Chicken with skin removed and cut into bite sized pieces
2 Thinly diced medium sized Onions
3 Large Tomatoes diced into small pieces
Half head of peeled garlic
2 in. of peeled ginger
2 Sprigs of fresh curry leaves
1 Tablespoon of whole black pepper
1 Teaspoon of ground turmeric powder
1 Teaspoon of Kashmiri red chili powder
2 Tablespoons of grated (fresh or frozen) coconut
1 Tablespoon of sesame oil
Directions:
Heat half of the oil in a pan and add 1 onion, the tomatoes, the whole pepper, ginger, garlic, and coconut, and sauté till gently roasted. Turn heat off and cool; after this, grind mixture to a smooth paste.
Heat the remaining oil in a nonstick pan and when the oil is slightly smoking add the chicken and sear until the juices are sealed in. At this point, add the remaining onion, turmeric, and chili powder and continue to sauté over a medium low heat.
Now add the ground mixture and sauté until flavors are incorporated and chicken is fully cooked.
Add salt to taste and serve with your favorite bread, rice, or quinoa side.
