Fragrant Malabar Fish Curry
Ingredients:
2 Cups of cut Red Onion
1 cup red onion sliced with 2 tomatoes Quartered
1 Teaspoon Cayenne Powder
2 Teaspoon Ground Turmeric
2 Teaspoon Whole Black Pepper
1/4 Cup Walnut Halves and 1/4 cup Shredded Coconut
2 Sprigs Curry Leaves
2-3 Dried Red Chilis
1 head of Fresh Garlic Halved
1 Tablespoon Tamarind Pulp or Paste
1 Teaspoon Black Mustard seeds
1/2 Teaspoon Fenugreek seeds
2 pounds indian King Fish or Any Mackerel variety fresh cut Thin steaks
3 Teaspoon sesame oil
1 Teaspoon Garlic Powder
1 cup Marinara sauce
Salt to taste
Directions:
Heat 1 Teaspoon oil in a pan and add the Whole Black Pepper, Red Chilis, Curry leaves, half the Garlic and sauté till browned
Add the Onion and Tomatoes to the mixture and brown further
Add the coconut and walnuts and brown
Steam gently and turn off heat
Place cooled Mixture in blender and blend into smooth paste
After washing fish with turmeric and set aside
Heat the remaining oil in deep Nonstick pan and add Mustard seeds, remaining Garlic and Fenugreek seeds
Add 1 cup of Red Onions and sauté along with Garlic Powder
Add the Ground Cayenne and remaining Turmeric
Add two cups water and add the Tamarind Paste
Allow the mixture to cook for 10 minutes on medium low heat
At this point add the ground mixture
Add 1 cup Marinara sauce
Allow the sauce the cook for additional 15 minutes on Moderate heat
Slowly add the fish and allow to simmer for 15 minutes
Serve as a Fish soup or Serve with Naan, white or brown rice, vermicelli or Quinoa
