Miso-marinated Salmon in coconut curry

Ingredients:

Salmon and Marinade -

1 tablespoon of white miso

1 teaspoon of chili powder (preferably Kashmiri chili powder)

1/2 teaspoon of turmeric

1/4 teaspoon of garlic salt

1 medium Salmon fillet cut into 2 x 2 x 2 inch cubes

1 teaspoon of sesame oil



Coconut Curry -

1 medium white onion (sliced finely)

1 large tomato (minced finely)

1 thai green chili - sliced in half, and the seeds in place

1 cup of coconut milk

1 cinnamon stick

1 teaspoon of sesame oil

1 bell pepper (diced)

1/2 cup of frozen green peas



Directions:

  • Marinate the Salmon cubes in the white miso, chill powder, turmeric, and garlic salt, and set aside in refrigerator for 1 hour.

  • Sauté the onions, green chili, and cinnamon stick in 1 teaspoon of sesame oil until gently browned.

  • Add the tomato to the mixture and sauté till softened ; then add the coconut milk and some water till a sauce consistency is reached.

  • Add the bell peppers, green peas, and salt to taste, and simmer gently for 5-10 min and set aside.

  • In a nonstick pan, rub the remaining 1 teaspoon of sesame oil throughout the pan and heat gently.

  • At the point when the pan is slightly smoking, add the salmon cubes and brown on all sides.

  • Set salmon aside after browning and heat the curry sauce to come to a gentle simmer.

  • Add the browned salmon, which is not completely cooked, and allow to complete the cooking process in the sauce.

  • Serve with either a favorite salad, slice of bread, naan, rice, polenta, or quinoa.



This dish retains all the delicate flavors of the salmon and elevates it to a whole new level. The miso adds seasoning to the fish and enhances the umami flavor profile of the dish.
