Shami Kebabs With Mint Sauce
Ingredients for Shami Kebabs:
½ pound ground chicken breast
1 cup of channa dhal, soaked overnight
1 teaspoon of cumin powder
1 teaspoon red chili flakes
1 teaspoon ground ginger and garlic paste
1 teaspoon of garam masala
1 large red onion, finely minced
1 cup of shredded mint leaves
2 tablespoons of olive oil
Salt to taste
Ingredients for Mint Yogurt Sauce:
1 cup of yogurt
½ cup of minced mint leaves
1 Thai green chili
1 teaspoon agave
Salt as needed
Directions for Shami Kebabs and Mint Sauce:
Place the channa dhal, onions, red chili flakes, cumin, and ginger-garlic paste in a food processor and grind to a semi-smooth mixture.
Add the ground chicken to a nonstick pan and finish cooking the chicken. When the mixture is cooled, place it in a food processor, grind it to a fine consistency, and mix it together with the channa mix.
Add the shredded mint leaves and salt as needed for taste, and make the mix into small patties.
Heat a griddle on low to medium heat and start pan-cooking the patties. Add oil as needed to brown both sides, making sure that the dhal and chicken are cooked through—taking about 5 minutes per side, making sure not to burn them. (Remember, we have already cooked the chicken prior and are now making sure that the dhal and chicken are cooked together.)
Mince the mint and chili and whisk into yogurt, along with agave and salt as needed.
Serve the kebabs with the mint sauce.
