Spicy Orange Chicken

Ingredients:

2 pounds of cubed, boneless, and skinless chicken breast or thighs

Juice of two large oranges

1 tsp of orange zest

½ tsp of Kasmiri chili powder

½ tsp of ground turmeric powder

½ tsp of ground cumin powder

2 tbsp of rice vinegar

1 large red onion (diced small)

1 tbsp of sesame oil

1 head of Broccoli (separated into bite-sized florets)

2 tsp of ginger/garlic paste



Directions:

  • Place the chicken in a large bowl and marinate with the orange juice, zest, chili powder, turmeric, cumin, and vinegar. Set aside in the refrigerator for 2 hours.

  • Heat 1 tbsp of oil in a large wok and when slightly smoking add the red onions, ginger/garlic paste, and chicken.

  • Cook these ingredients on a medium/high heat without burning to ensure searing of ingredients and no stewing.

  • When Chicken is almost cooked (~10-15 minutes), add the broccoli, salt to taste, and continue searing until all the ingredients are fully cooked.

  • Serve with warm brown rice/quinoa/roti.
