Indian-Spiced Turkey Meat Loaf
Ingredients:
2 pounds ground Lean Turkey
1 cup minced yellow squash
1 cup minced carrots
1 cup minced onion
2 green chillies minced
2 inch minced ginger
1/2 teaspoon garam masala
1/2 teaspoon ground turmeric
2 bread slices toasted with butter and on cooling made into bread crumbs
1 egg
2 teaspoon Olive oil
1/2 teaspoon ground chili paste
1 tablespoon finely minced cilantro
Salt to taste
Glaze:
1/2 cup ketchup
1/2 teaspoon chili paste
1 teaspoon agave
1 tablespoon Worcestershire sauce
Oven Preheated 325º F
Temp probe 165º F
Directions:
In a nonstick pan heat 1 teaspoon of olive oil and sauté 1 cup of minced yellow squash, 1 cup of minced carrots, 1 cup of minced onion, 2 minced green chilies, 2 in. of minced ginger, and 1/2 teaspoon of garam masala with 1/2 teaspoon ground turmeric. Set aside
Knead the Turkey with above ingredients, egg, chili paste, cilantro, and homemade bread crumbs, adding salt to taste and 1 teaspoon of olive oil—form a nice loaf
Place the loaf on non stick tray in oven with a thermometer reaching the core of the loaf
After 25 minutes, brush with glaze
Brush the loaf with the remaining glaze towards the last ten minutes of the cooking process
The thickest part of the meatloaf should reach an internal temperature of 165º F or above
After the bake*, let the meat loaf rest for 15 - 20 minutes before serving with favorite sides!
*May take 1 hour or more to ensure complete cooking
