Indian-spiced Roasted Vegetable/Caramelized Onion Goat Cheese tart w/ Almond flour

Toppings- Ingredients:

2 green capsicums - sliced into thin strips

1 red capsicum - sliced into thin strips

1 large onion - sliced into thin slices

1/2 cup of defrosted cut carrots and petite peas

1 teaspoon of olive oil

1 tablespoon of balsamic vinegar

1/4 teaspoon of turmeric

3 tablespoons of goat cheese - crumbled

Tart crust- Ingredients:

1 3/4 cup almond flour

1/4 teaspoon dried oregano and basil

1/4 teaspoon garam masala

1/4 teaspoon salt

1 teaspoon olive oil

1/2 teaspoon baking powder

1 beaten egg


Directions:

  • Mix all tart ingredients and knead mixture into a dough.

  • Preheat oven to 350 degrees, and chill the dough in refrigerator (keep dough covered).

  • Roll dough out on a flat surface and line the tart tin—bring the edges of the dough up to allow sufficient room for topping. Chill in the refrigerator.

  • In a large nonstick pan, heat olive oil and gently brown and caramelize the onions ;

When the onions are caramelized, add the balsamic and cook further till absorbed.

  • Add the sliced veggies and allow to soften and set aside to cool.

  • Par-bake the pie crust in the oven for 15 minutes, and after this, top with caramelized onions, veggies, and goat cheese. Bake for an additional 10 minutes at 350 degrees and finish the process by placing the tart under the broiler for 4 minutes.

I enjoy the taste of goat cheese, though it has lactose like cows’ milk, during the fermentation process this cheese undergoes a change that deems it more digestible.
