Masala Omelette

Ingredients:

  • 4 eggs – organic or free range

  • 2 tablespoons of whole or skim milk

  • 1 tablespoons of extra virgin olive oil

  • ½ teaspoon of Organic ground turmeric powder

  • ¼ teaspoon of ground Cayenne powder

  • ¼ teaspoon of Garam masala

  • 1 cup of freshly chopped mint

  • ½ cup of chopped fresh cilantro

  • 2 onions (small size) – sliced into thin slices

  • Salt to taste

Directions:

  • In a wide nonstick pan heat ½ tablespoon of the olive oil on a moderate heat.

  • Add the onions, spices, and chopped herbs to this oil and begin to sauté until the onions are translucent.

  • Remove the mixture from heat and add to a large bowl.

  • Beat eggs with some salt in a separate bowl and slowly add milk until the eggs are nice and frothy.

  • Add the spiced herbs and onions (when cooled) into the egg mixture and fold gently until fully incorporated, making sure not to deflate mixture.

  • Heat a nonstick pan with the remaining oil on a moderate heat and get a cloche ready.

  • When the pan is heated, gently add the eggs in two batches.

  • Gently lift the sides of the omelette as it cooks to allow uncooked egg to flow in. When there is no more egg mixture flowing freely in the pan, place the cloche on the pan and turn down to a very low heat.

  • This will allow the egg to gently steam.

  • Remove cloche and fold omelette and serve on a plate with your choice of Roti, Bread, Naan, Quinoa, or rice, and enjoy!
