Ingredients
2 cups of soaked and cooked chickpeas
2 red onions diced small
1 cup diced tomatoes
3 cloves of garlic crushed
2 star anise
1 cup of walnuts
1 teaspoon chili powder
1 teaspoon of coriander powder
¼ teaspoon ground turmeric
1 tablespoon of olive oil
Salt to taste
Directions:
In a shallow nonstick pan, heat olive oil and add and slightly brown the garlic and onions.
Add the tomatoes and star anise, and continue to cook until the tomatoes break down.
Add the chili powder, coriander powder, turmeric, and salt as needed.
Add 1/2 cups of water to bring th sauce into a curry consistency and add the garbanzo or chick peas.
Grind the walnuts to a fine paste and add to the sauce.
Continue to cook over medium heat until all ingredients are incorporated.
Serve with rice, roti, or quinoa.
