Chickpea Masala

Ingredients

  1. 2 cups of soaked and cooked chickpeas

  2. 2 red onions diced small

  3. 1 cup diced tomatoes

  4. 3 cloves of garlic crushed

  5. 2 star anise

  6. 1 cup of walnuts

  7. 1 teaspoon chili powder

  8. 1 teaspoon of coriander powder

  9. ¼ teaspoon ground turmeric

  10. 1 tablespoon of olive oil

  11. Salt to taste

Directions:

  • In a shallow nonstick pan, heat olive oil and add and slightly brown the garlic and onions.

  • Add the tomatoes and star anise, and continue to cook until the tomatoes break down.

  • Add the chili powder, coriander powder, turmeric, and salt as needed.

  • Add 1/2 cups of water to bring th sauce into a curry consistency and add the garbanzo or chick peas.

  • Grind the walnuts to a fine paste and add to the sauce.

  • Continue to cook over medium heat until all ingredients are incorporated.

  • Serve with rice, roti, or quinoa.
