Sweet and Savory Brown Rice with Sweet Potatoes and Toasted Walnuts
Ingredients:
4 Cups cooked brown rice
3/4 Cup walnut halves
1 Onion sliced
1/2 teaspoon Garam Masala
1/2 Teaspoon Ground Turmeric
4 cups cubed sweet Potato
1/4 cup dried Cranberries
3 teaspoon Extra virgin Olive oil
2-3 cups of water
Directions
Heat 1 teaspoon of oil in nonstick pan and add the Onions
Sauté till the Onion has a mild brown color and set aside
In the same pan heat 1 teaspoon oil and toast the Walnuts and set aside
Heat the 1 Teaspoon of oil and add the Sweet Potatoes
Allow to caramelize and add the Turmeric, Garam Masala and salt to taste
After spices are incorporated add 2 cups boiling water and allow the sweet potatoes to soften
Add the Cranberries and allow to cook with the Sweet Potatoes
After Sweet Potatoes are cooked add the Brown rice and gently fold in
Serve with your Favorite vegetable side , curry , meat dish or just by itself
The Brown rice retains its nutty flavor and is complemented by the sweet potatoes. The Indian spices add a savory note to the sweetness of the cranberries and other ingredients.
