Sweet and Savory Brown Rice with Sweet Potatoes and Toasted Walnuts

Ingredients:

  • 4 Cups cooked brown rice

  • 3/4 Cup walnut halves

  • 1 Onion sliced

  • 1/2 teaspoon Garam Masala

  • 1/2 Teaspoon Ground Turmeric

  • 4 cups cubed sweet Potato

  • 1/4 cup dried Cranberries

  • 3 teaspoon Extra virgin Olive oil

  • 2-3 cups of water

Directions


  • Heat 1 teaspoon of oil in nonstick pan and add the Onions

  • Sauté till the Onion has a mild brown color and set aside

  • In the same pan heat 1 teaspoon oil and toast the Walnuts and set aside

  • Heat the 1 Teaspoon of oil and add the Sweet Potatoes

  • Allow to caramelize and add the Turmeric, Garam Masala and salt to taste

  • After spices are incorporated add 2 cups boiling water and allow the sweet potatoes to soften

  • Add the Cranberries and allow to cook with the Sweet Potatoes

  • After Sweet Potatoes are cooked add the Brown rice and gently fold in

  • Serve with your Favorite vegetable side , curry , meat dish or just by itself


The Brown rice retains its nutty flavor and is complemented by the sweet potatoes. The Indian spices add a savory note to the sweetness of the cranberries and other ingredients.
