Spinach and Chicken Curry
Ingredients
2 pounds of boneless skinless Chicken Breast or Thigh meat
1-2 cups of diced White Onion
1-2 cups of Tomato cut small
8 cups of Spinach
1/2 cup unsalted roasted pumpkin seeds
1 inch Ginger cut small
2 Teaspoons Sesame oil
1 Teaspoon Garam Masala
1/2 Teaspoon Turmeric
1 Teaspoon Freshly ground Black Pepper
Directions:
Heat oil in large nonstick pan
Add the Chicken and brown completely, to seal in the juices
Add the Spices to the Chicken and continue to brown
Remove the Chicken as set aside to rest and cut into small pieces
In the fat and oil of Chicken add the Onions and brown
Add the Tomatoes in and continue to cook with the Onions
After the Tomatoes and Onions have cooked add the Chicken pieces
Add the Spinach to the Chicken and allow to cook down
Grind the Pumpkin seeds in blender with some water to make a paste
Add the ground Pumpkin seeds to the sauce and allow to simmer and thicken
Serve with Rice- white or brown, Naan, polenta or Quinoa
Note:
You can add other mixed Greens like Swiss Chard, Kale to the Spinach.
This Dish has a warm nutty flavor and is loaded with vitamins, minerals, and protein.
