Spinach and Chicken Curry

Ingredients

  1. 2 pounds of boneless skinless Chicken Breast or Thigh meat

  2. 1-2 cups of diced White Onion

  3. 1-2 cups of Tomato cut small

  4. 8 cups of Spinach

  5. 1/2 cup unsalted roasted pumpkin seeds

  6. 1 inch Ginger cut small

  7. 2 Teaspoons Sesame oil

  8. 1 Teaspoon Garam Masala

  9. 1/2 Teaspoon Turmeric

  10. 1 Teaspoon Freshly ground Black Pepper

Directions:

  • Heat oil in large nonstick pan

  • Add the Chicken and brown completely, to seal in the juices

  • Add the Spices to the Chicken and continue to brown

  • Remove the Chicken as set aside to rest and cut into small pieces

  • In the fat and oil of Chicken add the Onions and brown

  • Add the Tomatoes in and continue to cook with the Onions

  • After the Tomatoes and Onions have cooked add the Chicken pieces

  • Add the Spinach to the Chicken and allow to cook down

  • Grind the Pumpkin seeds in blender with some water to make a paste

  • Add the ground Pumpkin seeds to the sauce and allow to simmer and thicken

  • Serve with Rice- white or brown, Naan, polenta or Quinoa


Note:

You can add other mixed Greens like Swiss Chard, Kale to the Spinach.

This Dish has a warm nutty flavor and is loaded with vitamins, minerals, and protein.
