Ingredients:
1 cup of Bombay Rava ( a form of semolina made of wheat)
3 cups of water
½ cup of raisins
½ cup of cashews
1 tablespoon of butter
1 tablespoon of vegetable oil
¾ cup of sugar
½ teaspoon of saffron soaked in 2 tablespoons of hot water
Directions:
In a nonstick pan heat the butter and sauté the raisins and cashews. Set this mixture aside.
In the remaining butter roast the Rava on a medium heat while stirring the semolina. Keep this mixture at hand.
Heat all of the water in a nonstick pan and bring it to a boil.
At this point, add the Rava while constantly stirring with a whisk to prevent lumps and gradually pour in the saffron water.
Add the oil and continuously stir until the Rava is smooth and silky.
At this point fold the raisins and cashews into your Rava.
You can serve this dessert warm or at room temperature.
This dish is a very simple version of semolina (which is very similar to polenta) but served as a sweet. It is ideally made during holiday seasons. As always, I encourage you to keep your health in center focus and live long and strong!
