Indian Blackened Tilapia with Tamarind Drizzle
Ingredients:
2 tsp of Chili powder
2 tsp of Ground Black Pepper
1 tsp of Turmeric
salt to taste
2 tbs oil and nonstick pan
Tilapia fillets
Tamarind concentrate 2 tablespoon
1 tsp soy sauce
1 tbs tomato sauce
Directions:
Dissolve the Tamarind in 1/2 cup hot water and add soy sauce, tomato sauce, 1 tsp chilli powder, salt to taste and simmer gently and set aside
Place the remaining chili powder, black pepper, turmeric in a shallow bowl and coat fish fillets on both sides, making sure they are all coated evenly and seasoned with salt.
Heat nonstick pan, until almost smoking, then lower temperature and cook the fillets on both sides about 1-2 minutes per side and set aside
Heat the broiler for 10 minutes and place the fillets under the broiler for additional 5-10 minutes till completely cooked.
Serve drizzled with Tamarind sauce with steamed edamame, steamed rice or vegetables.
This dish is full of protein and flavor. It has a Caribbean flare to it,yet retains the authenticity of traditional Indian flavors. It can be enjoyed year round and other white firm fish varieties can be used in place of Tilapia. As always I wish that you eat wisely and live long and strong.
