Ingredient Spotlight  :  Garlic   Allium sativum L.

Garlic is well known in our world cultures and has been used extensively for its medicinal and culinary properties. In this section we will explore some of the emerging science and health benefits of this vital culinary ingredient:

  • Garlic has Organosulfur-compounds or OSC’s that may have the ability to hinder cancer cells, which is in turn related to the length of the sulfur chain. Garlic may play a role in preventing the occurrence of esophageal, gastric and prostate cancers.



  • Emerging science points to Garlic and its beneficial effect on cardiovascular health. This may-be secondary to its effects on Lipid metabolism, and Platelet function. Garlic may play a role in decreasing the rate of progression of coronary calcification.



  • Garlic also seems to have some antioxidant effects. Science has recognized that oxidation of LDL plays a role in worsening of atherosclerosis. Garlic has been shown to suppress LDL oxidation.



  • Garlic also positively affects blood pressure by generating hydrogen sulfide which may play a role in relaxing the smooth muscle in the blood vessel and therefore lowering blood pressure.



  • Garlic may also play a beneficial anti-inflammatory role by modulating factors in our immune system and blood.



*Atherosclerosis : A process of hardening and deposition of fats, calcium, and other substances on the arterial blood vessel wall that can restrict blood flow and lead to heart attacks, strokes and obstruction of blood flow to vital organs and limbs.

*LDL Cholesterol : A type of cholesterol which when in excess can worsen atherosclerosis. It is also referred to as a bad cholesterol or unhealthy fat within our body and it is cleared by our liver.
