Pulao with Sliced Potato Medallions

Pulao Ingredients:

  1. 2 cups Basmati rice soaked in water for 2 hours

  2. 1 large onion in thin slices

  3. 3 Green Peppers or Capsicum in thin slices

  4. 2 Serrano chilies in thin slices

  5. 4 cups of Almond milk

  6. 2 Cardamom pods

  7. 4 whole Star anise

  8. 2 tablespoons of Sesame oil

  9. Rice cooker

  10. 1 teaspoon of Garam masala

  11. ½ teaspoon of ground Coriander seeds

  12. 100 grams of Soya chunks re-hydrated in hot water and drained (Meal Maker brand or others)

  13. Salt to taste


Potato Medallions Ingredients:

  1. 4 large potatoes peeled and sliced into medallions

  2. ½ teaspoon of Chili powder

  3. ½ teaspoon of Turmeric powder

  4. ½ teaspoon Garlic powder

  5. Salt to taste

Directions:

  • For the Pulao, heat 1 tablespoon of the oil in a large nonstick wok and add the star anise, cardamom pods, serrano chilies, and onion and sauté till browned over a medium heat.

  • Add the capsicum, soy chunks, garam masala, coriander powder, and salt and sauté until the capsicum is al dente.

  • Drain the rice and place in a rice cooker along with these ingredients and add the almond milk. At this point you can cook it per the rice cooker’s directions.

  • You can also prepare the rice over the stove in nonstick deep pot, but you will have to boil the almond milk separately and add it to the mixture of rice with veggies in the pot. Then bring it to a boil, lower heat to simmer for 10 minutes with a lid, and stop the heat—the rice will steam beautifully in the pot and you can fluff it with a fork before serving.

  • For the Potato medallions—parboil the potato medallion slices, drain and marinate them in the chili powder, turmeric, garlic powder, and salt to taste.

  • Heat the remaining 1 tablespoon of oil on a nonstick flat griddle and cook the potato medallions over this griddle until softened. Serve with the Pulao.


This dish is completely vegetarian but has the meaty soy chunks you need to satisfy your meat craving, plus the high protein content. The medallions are crisp on the outside but beautifully soft inside and are an excellent complement to the Pulao.
