Cranberry Jam

Cranberry Jam

This jam has the lowest amounts of sugar and is an excellent accompaniment to toast, spoon rolls and also with turkey dishes.

Ingredients:

1 pound Fresh washed cranberry

1/2 teaspoon lime rind

Juice of one lime

6 teaspoon organic stevia

2 cups orange juice

2 teaspoon light brown sugar

Directions:

1.In a large nonstick sauté pan over moderate heat, add cranberries, lime rind, orange juice and allow the mixture to cook. 

2.You will hear the popping noise of the cranberries as the jam cooks.

3.Add the organic stevia and brown sugar and allow to boil and reduce until it is a jam consistency.

4.An immersion blender can be used to smooth out the mixture, The jam can also be strained if desired.

5.Once cooled place in sterilized container.
