Coconut Milk and Cinnamon Flavored Soaked Oats With Chia Seeds
Ingredients:
3 cups of rolled oats
1 cup of light coconut milk
3 cups of almond milk or 2% milk
½ cup of shredded coconut
½ teaspoon of ground cinnamon
½ teaspoon of vanilla extract
2 tablespoons of brown sugar
½ cup of organic Chia seeds
¼ cup of dried cranberries
2 cups of water to dilute as needed
Directions:
Mix all the above ingredients in a large microwavable bowl.
The water should be added only if the mixture still seems dry and the oatmeal should be completely submerged about ½ inch under the liquid.
Leave this mixture to soak overnight in the refrigerator.
When ready for breakfast, microwave the mixture on high for 2-3 minutes and set aside.
While serving, you can add additional almond milk or whole milk to loosen the oats.
Serve with a garnish of shredded coconut and enjoy!
