Organic Coconut flour Brownies without butter
Ingredients:
1 ½ cups of coconut flour
¾ cup organic cacao powder
½ cup of melted coconut oil
½ teaspoon salt
1 teaspoon vanilla extract
3 large eggs beaten until smooth
¾ cup coconut sugar
1 cup Organic chocolate chips—bittersweet
Directions:
In a large bowl mix the coconut flour, cacao powder, and salt.
Mix together the eggs, sugar, vanilla extract, and melted coconut oil and whisk till smooth and add above dry ingredients and incorporate together.
Add ½ - ¾ cup milk if the mixture looks very dry—as the coconut flour absorbs large amounts of liquids easily, but the batter should be pretty thick and not watery.
Mix ½ of the chocolate chips in the batter
Preheat the oven to 350 °F and line an 8"×8" pan with parchment paper.
Pour the batter into the pan and sprinkle the remaining chocolate chips on top.
Bake for 40 min in a lower rack of the oven and remove from oven when the knife inserted into the mixture comes out clean.
When completely cooled cut into squares and chill in the refrigerator.
The brownies will have a fudgy texture.
Note: When compared to regular flour which has about 2.7 grams of fiber per 100gm, coconut flour has 32 + gms and is considered a functional food with respect to digestive health. Try to buy organic coconut flour from defatted coconut meat—this will help keep the fat content lower.
